I came across a horde of zombies today (at least I think "horde" is the correct term for a group of zombies). So why brains? Why not the bits that don't require all the effort involved in cracking a skull?
Well, actually, it's really just the Return of the Living Dead zombies that have the brain fixation. Romero zombies seem to prefer entrails or, rather sensibly, going for the throat.
The original brain-eating zombies were in horrible, horrible pain when they hadn't eaten any brains recently, if I recall correctly; they actually stopped acting zombielike after eating brains, able to have conversations with people and regret their actions before they return to being mindless undead driven purely by the unbearable pain.

In a previous life they enjoyed shelling coconuts.

For the same reason animals waste energy on cracking open nuts... for the fatty rich content? :-)
I'm used to the general flesh eating zombies thanks to games like Resident Evil.
Return of the Living Dead was just plain hilarious.
